Ingredients

- 1 whole head of garlic
- 1/2 cup mayonnaise
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C)
- Cut top off garlic head, drizzle with olive oil
- Roast garlic for 35-40 minutes until soft and golden
- Squeeze roasted garlic cloves into mayonnaise
- Mix with lemon juice, salt, and pepper

- Store in an airtight container in the refrigerator
- Best used within 5-7 days
- Let garlic cool completely before mixing with mayonnaise
