Ingredients

- 10 tomatillos, husked and quartered
- 1 onion, quartered
- 2 garlic cloves, unpeeled
- 1 jalapeño, stemmed (optional)
- 1/2 cup cilantro, roughly chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Place tomatillos, onion, garlic, and jalapeño on a baking sheet.
- Roast in the oven for about 20-25 minutes, or until slightly charred.
- Remove from the oven and let cool slightly.
- Peel the garlic cloves.
- Place all roasted ingredients in a blender or food processor.
- Add cilantro, lime juice, and salt.
- Blend until smooth.
- Taste and adjust seasoning if necessary.
- Serve with chips or as a topping for chicken.
Notes
Letting the salsa rest for at least 30 minutes allows the flavors to meld and intensify. Adjust the level of spiciness by varying the number of jalapeños.
