Ingredients

  • 45 pounds beef roast
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup red wine

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix olive oil, minced garlic, chopped rosemary, salt, and black pepper in a small bowl.
  3. Rub the mixture all over the beef roast.
  4. Heat a large pan over medium-high heat and sear the roast on all sides until browned.
  5. Transfer the roast to a baking dish and pour beef broth and red wine around it.
  6. Cover with foil and roast in the preheated oven for about 90 to 120 minutes or until the internal temperature reaches your desired doneness.
  7. Remove from the oven and let it rest for 10-15 minutes before slicing. Serve and enjoy!
