A hearty and comforting rotisserie chicken and rice casserole, perfect for family dinners.


Ingredients

  • 1 rotisserie chicken, shredded (about 34 cups)
  • 1 ½ cups long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 ½ cups shredded cheddar cheese
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • ½ cup crushed crackers (such as Ritz) for topping (optional)
  • 2 tablespoons melted butter for topping (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Remove the skin and bones from the rotisserie chicken and shred the meat into bite-sized pieces. Set it aside.
  3. In a large bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, diced onion, dried thyme, salt, and pepper. Stir until smooth and well combined.
  4. Add the uncooked rice to the bowl with the sauce mixture and stir to coat the rice evenly.
  5. Add in the shredded rotisserie chicken and stir again until all ingredients are evenly distributed.
  6. Transfer the rice and chicken mixture into the prepared baking dish and spread it evenly. Cover with aluminum foil.
  7. Bake the casserole in the preheated oven for 45 minutes. Then, remove the foil and sprinkle the shredded cheddar cheese evenly over the top.
  8. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  9. If you want a crispy topping, combine the crushed crackers with the melted butter and sprinkle over the casserole.
  10. Return to the oven for another 5 minutes until the topping is golden brown.
  11. Let the casserole rest for 5-10 minutes before serving. Garnish with fresh parsley and serve hot.

Notes

This casserole stores well in the refrigerator for up to three days. You can also customize it by adding vegetables or using different cheeses.
