- 1 cup chicken broth
- 1 tablespoon Worcestershire sauce
- Salt and black pepper (to taste)
- 1/2 teaspoon dried thyme
- 3 large Yukon Gold potatoes (peeled and cubed)
- 1/3 cup milk
- 2 tablespoons butter
- Salt (to taste)
- Optional: 1/4 cup shredded cheddar cheese (for extra richness)
Instructions
- Prep the Potatoes: In a large pot, add cubed potatoes and cover them with cold water. Season with salt and bring to a boil. Cook until tender, about 15 minutes, then drain.
- Make the Filling: While the potatoes cook, heat olive oil in your skillet. Sauté the diced onion until soft. Add minced garlic and cook for another minute.
- Add the Chicken: Stir in the shredded rotisserie chicken, peas, carrots, and corn (if using). Season with salt, pepper, and thyme, stirring everything to combine.
- Make it Saucy: Sprinkle the flour over the mixture, stirring to coat. Gradually pour in the chicken broth and Worcestershire sauce, letting it simmer until it thickens slightly.
- Assemble: Spread the chicken mixture into a baking dish. Mash the cooked potatoes with milk and butter, seasoning with salt to taste. Spread the mashed potatoes over the chicken layer, smoothing it out evenly.
- Bake: Bake the assembled shepherd’s pie in the preheated oven for about 25-30 minutes, or until the top is golden brown. If you’re using cheddar cheese, sprinkle it on top in the last five minutes of baking.
- Serve & Enjoy: Let the shepherd’s pie cool slightly before serving. Each serving reveals layers of savory chicken and creamy potatoes, making it a hit at dinner.
