Description

A comforting and hearty shepherd’s pie made with shredded rotisserie chicken, vibrant vegetables, and creamy mashed Yukon Gold potatoes.

Ingredients

Scale
  • 2 cups shredded rotisserie chicken (skin removed)
  • 1 tablespoon olive oil
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup frozen peas and carrots mix
  • 1/2 cup corn (optional)
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper (to taste)
  • 1/2 teaspoon dried thyme
  • 3 large Yukon Gold potatoes (peeled and cubed)
  • 1/3 cup milk
  • 2 tablespoons butter
  • Salt (to taste)
  • Optional: 1/4 cup shredded cheddar cheese (for extra richness)

Instructions

  1. Prep the Potatoes: In a large pot, add cubed potatoes and cover them with cold water. Season with salt and bring to a boil. Cook until tender, about 15 minutes, then drain.
  2. Make the Filling: While the potatoes cook, heat olive oil in your skillet. Sauté the diced onion until soft. Add minced garlic and cook for another minute.
  3. Add the Chicken: Stir in the shredded rotisserie chicken, peas, carrots, and corn (if using). Season with salt, pepper, and thyme, stirring everything to combine.
  4. Make it Saucy: Sprinkle the flour over the mixture, stirring to coat. Gradually pour in the chicken broth and Worcestershire sauce, letting it simmer until it thickens slightly.
  5. Assemble: Spread the chicken mixture into a baking dish. Mash the cooked potatoes with milk and butter, seasoning with salt to taste. Spread the mashed potatoes over the chicken layer, smoothing it out evenly.
  6. Bake: Bake the assembled shepherd’s pie in the preheated oven for about 25-30 minutes, or until the top is golden brown. If you’re using cheddar cheese, sprinkle it on top in the last five minutes of baking.
  7. Serve & Enjoy: Let the shepherd’s pie cool slightly before serving. Each serving reveals layers of savory chicken and creamy potatoes, making it a hit at dinner.

Notes

For added richness, you can top with shredded cheddar cheese before baking. Leftovers can be stored in the refrigerator for up to three days.
