Easy and creamy weeknight dinner featuring rotisserie chicken, sour cream, and Monterey Jack cheese wrapped in flour tortillas.
Ingredients

- 2 cups Rotisserie chicken, shredded
- 1 cup Sour cream
- 1 cup Salsa verde or enchilada sauce
- 1 cup Monterey Jack cheese, shredded
- 8 Flour tortillas
- 1 teaspoon Cumin
- Salt to taste
- Pepper to taste
- Cilantro or chives (for garnish, if desired)
Instructions
- Preheat your oven to 375°F.
- Mix together the salsa verde or enchilada sauce with cumin, salt, and pepper in a bowl.
- Shred the rotisserie chicken and toss it in the sauce mixture until coated.
- Fill each flour tortilla with the chicken mixture and a sprinkle of Monterey Jack cheese.
- Roll them tightly and place them seam-side down in a baking dish.
- Pour the remaining sauce over the top and sprinkle with more Monterey Jack cheese.
- Bake in the oven for 20-25 minutes or until the cheese is melty and bubbly.
Notes
Use fresh herbs for garnish and feel free to experiment with different cheeses.
