Easy and creamy weeknight dinner featuring rotisserie chicken, sour cream, and Monterey Jack cheese wrapped in flour tortillas.


Ingredients

  • 2 cups Rotisserie chicken, shredded
  • 1 cup Sour cream
  • 1 cup Salsa verde or enchilada sauce
  • 1 cup Monterey Jack cheese, shredded
  • 8 Flour tortillas
  • 1 teaspoon Cumin
  • Salt to taste
  • Pepper to taste
  • Cilantro or chives (for garnish, if desired)

Instructions

  1. Preheat your oven to 375°F.
  2. Mix together the salsa verde or enchilada sauce with cumin, salt, and pepper in a bowl.
  3. Shred the rotisserie chicken and toss it in the sauce mixture until coated.
  4. Fill each flour tortilla with the chicken mixture and a sprinkle of Monterey Jack cheese.
  5. Roll them tightly and place them seam-side down in a baking dish.
  6. Pour the remaining sauce over the top and sprinkle with more Monterey Jack cheese.
  7. Bake in the oven for 20-25 minutes or until the cheese is melty and bubbly.

Notes

Use fresh herbs for garnish and feel free to experiment with different cheeses.
