Ingredients

  • 2 1/2 lbs (1134 g) salmon filet sliced into 2” wide slices
  • 3 Tbsp (45 ml) teriyaki sauce
  • 3 Tbsp (45 ml) hoisin sauce
  • 3 Tbsp (45 ml) soy sauce
  • 1 Tbsp (15 ml) white vinegar
  • 1 Tbsp (15 ml) sesame oil
  • 1/3 cup (80 g) packed light brown sugar
  • 2 large or 3 medium garlic cloves, minced
  • 2 tsp (10 ml) freshly grated ginger, or 1/2 tsp ground ginger
  • Sesame seeds to garnish, optional
  • Green onion, chopped, optional

Instructions

  1. Coat a large baking sheet with a rim, using foil and then greasing it to make cleaning easier. Heat the oven to 400˚F.
  2. Mix together the sauce components and stir until the brown sugar is fully dissolved.
  3. Put the salmon pieces into a mixing bowl. Pour the sauce mixture over them, cover with plastic wrap, and let them sit for 20 minutes (either at room temperature or in the fridge).
  4. Move the salmon onto the prepared baking sheet while keeping the marinade aside. Bake at 400˚F for 12-16 minutes or until the salmon is flaky and thoroughly cooked, adjusting the time based on the thickness of the fish.
  5. As the salmon bakes, pour the leftover marinade into a small saucepan, bring it to a boil, then lower the heat and let it simmer, stirring now and then, until it slightly thickens (about 3-4 minutes), then take it off the heat.
  6. After removing the salmon from the oven, brush it with the thickened teriyaki mixture, then, if desired, sprinkle with chopped green onions and sesame seeds.

Notes

  • For a bolder ginger flavor, increase the amount of freshly grated ginger or use ground ginger sparingly.
  • Enhance the sweetness by adding a bit more brown sugar to the sauce mixture.
