Description

Healthy apple slices inspired by Samoa Girl Scout cookies, combining creamy almond butter, coconut, and a chocolate drizzle.

Ingredients

Scale
  • 2 medium apples of choice
  • 1/2 cup smooth natural almond butter
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 3/4 cup unsweetened shredded coconut
  • 3 tablespoons vanilla protein powder
  • 1/2 cup non-dairy chocolate chips

Instructions

  1. Line a baking sheet with parchment paper and set it aside.
  2. Wash the apples thoroughly.
  3. Slice each apple into round pieces, aiming for about six slices per apple.
  4. Use a small knife or a round cutter to remove the core from each apple slice.
  5. In a mixing bowl, stir together the almond butter, maple syrup, and vanilla extract until smooth.
  6. Add the shredded coconut, protein powder, and a pinch of salt. Mix until evenly combined.
  7. Spoon the Samoa mixture onto each apple slice, gently spreading it to cover the center.
  8. Place the topped apple slices on the prepared baking sheet and refrigerate.
  9. In a microwave-safe bowl, melt the chocolate chips until smooth.
  10. Drizzle the melted chocolate over the apple slices and allow it to set before serving.
