- 12 breakfast sausage links (pre-cooked or raw)
- 12 slices sandwich bread (crusts removed)
- 3 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 2–3 tbsp butter (for cooking)
- Maple syrup (for serving)
- Optional: powdered sugar for dusting
Instructions
- Cook the sausages: If using raw sausages, cook according to package directions until fully done. Set aside to cool slightly.
- Prep the bread: Use a rolling pin to flatten each slice of bread. Place a cooked sausage at one end and roll up tightly, ensuring the sausage is snugly wrapped.
- Make the egg mixture: In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
- Dip & cook: Heat a large skillet over medium heat. Melt 1 tablespoon of butter in the skillet. Dip each roll-up into the egg mixture, coating all sides, then place in the skillet seam-side down.
- Fry until golden: Cook each roll-up for 2–3 minutes per side, turning to brown evenly. Add more butter to the skillet as needed for a perfect golden crust.
- Serve: Dust with powdered sugar if desired. Serve warm alongside maple syrup for dipping.
Notes
For a crowd, pre-cook sausage links the night before. Use sturdy bread like Texas toast or challah for better rolling.
