- 2 cups Pancake Mix
- 3 large Eggs
- 2 cups Whole Milk (or Almond Milk)
- 1 pound Breakfast Sausage Links
- 2 cups Shredded Cheddar Cheese (or Mozzarella)
- 1/2 cup Maple Syrup
- 1 can Non-Stick Baking Spray
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the breakfast sausage links in a large skillet over medium heat until fully browned and cooked through. Set them aside to cool slightly before slicing into bite-sized pieces.
- Combine the pancake mix, milk, and eggs in a large mixing bowl. Whisk until smooth.
- Generously spray the baking dish with non-stick baking spray.
- Pour half of the pancake batter into the prepared baking dish, spreading it evenly.
- Layer the sliced breakfast sausage over the pancake batter.
- Sprinkle one cup of shredded cheese over the sausage.
- Add the remaining pancake batter on top of the cheese and sausage layer, covering everything completely.
- Pour the remaining cheese on top for a melty finish.
- Drizzle maple syrup over the entire layer.
- Place the breakfast lasagna in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before slicing into squares to serve.
Notes
Consider adding sautéed vegetables for added nutrition or swap breakfast sausage for turkey sausage for a leaner option.
