Description

Delightful bite-sized McGriddle Bites filled with sausage, cheese, and chives, perfect for breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup cooked and crumbled breakfast sausage
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped chives
  • Maple syrup, for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the egg, then whisk in the buttermilk and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir just until combined, being careful not to overmix.
  5. Gently fold in the crumbled sausage, shredded cheese, and chopped chives.
  6. Spoon the batter evenly into the prepared mini muffin tin, filling each cup about 3/4 full.
  7. Bake for 12-15 minutes or until the tops are golden and a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let cool in the pan for 5 minutes before transferring the bites to a wire rack to cool completely.

Notes

Serve warm with maple syrup for dipping, if desired. You can also experiment with different kinds of cheese for a unique twist.
