Delightful bite-sized McGriddle Bites filled with sausage, cheese, and chives, perfect for breakfast or brunch.
Ingredients

- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 cup cooked and crumbled breakfast sausage
- 1/2 cup shredded cheddar cheese
- 1/4 cup finely chopped chives
- Maple syrup, for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg, then whisk in the buttermilk and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients. Stir just until combined, being careful not to overmix.
- Gently fold in the crumbled sausage, shredded cheese, and chopped chives.
- Spoon the batter evenly into the prepared mini muffin tin, filling each cup about 3/4 full.
- Bake for 12-15 minutes or until the tops are golden and a toothpick inserted into the center of a muffin comes out clean.
- Remove from the oven and let cool in the pan for 5 minutes before transferring the bites to a wire rack to cool completely.
Notes
Serve warm with maple syrup for dipping, if desired. You can also experiment with different kinds of cheese for a unique twist.
