- 1 onion, diced (yellow or white)
- 2 cloves garlic, minced
- 1 lb ground turkey
- Salt, to taste
- Pepper, to taste
- 1 tsp paprika
- 2 zucchinis, chopped
- 1 bell pepper, diced (any color)
- 1 can diced tomatoes (14.5 oz, drained)
- 1 tsp oregano (dried)
Instructions
- Drizzle olive oil into a large skillet over medium heat. Once shimmering, add the diced onion and minced garlic, sautéing for about 2-3 minutes until fragrant and translucent.
- Increase the heat to medium-high and crumble in the ground turkey. Season with salt, pepper, and paprika, cooking for about 5-7 minutes until nicely browned and no longer pink.
- Toss in the chopped zucchinis and diced bell pepper. Stir and cook for another 3-4 minutes, allowing the veggies to soften.
- Pour in the drained diced tomatoes and sprinkle with oregano. Stir well, then lower the heat and let it simmer for about 10 minutes.
- Before serving, check seasoning and adjust with salt or pepper as necessary. Serve hot.
