- 4 eggs
- 1 can of diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, for garnish
- 4 slices of bread
Instructions
- Heat some olive oil in a skillet over medium heat. Add the chopped onions and bell pepper, sautéing until softened.
- Stir in the garlic, cumin, and paprika, cooking for another minute.
- Add the diced tomatoes and season with salt and pepper. Simmer for about 5-10 minutes until the mixture thickens slightly.
- Make small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook until the eggs are done to your liking.
- Toast the bread slices.
- Serve the shakshouka on toasted bread, garnished with fresh parsley. Enjoy!
Notes
Don’t rush the sautéing process; allow onions and peppers to soften for enhanced sweetness. Adjust spices to personal preference.
