  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A vibrant and comforting dish that combines eggs, tomatoes, and spices served over crispy toast.

Ingredients

Scale
  • 4 eggs
  • 1 can of diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, for garnish
  • 4 slices of bread

Instructions

  1. Heat some olive oil in a skillet over medium heat. Add the chopped onions and bell pepper, sautéing until softened.
  2. Stir in the garlic, cumin, and paprika, cooking for another minute.
  3. Add the diced tomatoes and season with salt and pepper. Simmer for about 5-10 minutes until the mixture thickens slightly.
  4. Make small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook until the eggs are done to your liking.
  5. Toast the bread slices.
  6. Serve the shakshouka on toasted bread, garnished with fresh parsley. Enjoy!

Notes

Don’t rush the sautéing process; allow onions and peppers to soften for enhanced sweetness. Adjust spices to personal preference.
