- 1 cup orzo pasta
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat.
- Add the onion, carrots, and celery. Sauté until the vegetables are tender, about 5 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Add the vegetable broth and diced tomatoes to the pot and bring to a boil.
- Add the orzo pasta and reduce the heat to a simmer.
- Cook until the orzo is al dente, about 8-10 minutes.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley.
