Ingredients

  • 1 cup orzo pasta
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the onion, carrots, and celery. Sauté until the vegetables are tender, about 5 minutes.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Add the vegetable broth and diced tomatoes to the pot and bring to a boil.
  5. Add the orzo pasta and reduce the heat to a simmer.
  6. Cook until the orzo is al dente, about 8-10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with fresh parsley.
