Ingredients

- 3–4 pounds corned beef brisket
- 1 small head of cabbage, cut into wedges
- 4 large carrots, peeled and cut into chunks
- 4–5 medium potatoes, quartered
- 4 cups beef broth
- 1 onion, quartered
- 2–3 cloves garlic, minced
- 1 tablespoon mustard seeds
- 1–2 bay leaves
- Salt and pepper to taste
Instructions
- Place the corned beef brisket in the slow cooker.
- Add the onion, garlic, mustard seeds, bay leaves, salt, and pepper.
- Pour in the beef broth until the brisket is mostly submerged.
- Cover and cook on low for 8-10 hours or until tender.
- In the last 2 hours, add the potatoes, carrots, and cabbage wedges to the slow cooker.
- Continue cooking until the vegetables are tender.
- Slice the corned beef against the grain and serve with the vegetables and some of the broth.
Notes
For additional flavor, consider marinating the corned beef overnight or adding a splash of apple cider vinegar to the broth.
