Ingredients

  • 34 pounds corned beef brisket
  • 1 small head of cabbage, cut into wedges
  • 4 large carrots, peeled and cut into chunks
  • 45 medium potatoes, quartered
  • 4 cups beef broth
  • 1 onion, quartered
  • 23 cloves garlic, minced
  • 1 tablespoon mustard seeds
  • 12 bay leaves
  • Salt and pepper to taste

Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Add the onion, garlic, mustard seeds, bay leaves, salt, and pepper.
  3. Pour in the beef broth until the brisket is mostly submerged.
  4. Cover and cook on low for 8-10 hours or until tender.
  5. In the last 2 hours, add the potatoes, carrots, and cabbage wedges to the slow cooker.
  6. Continue cooking until the vegetables are tender.
  7. Slice the corned beef against the grain and serve with the vegetables and some of the broth.

Notes

For additional flavor, consider marinating the corned beef overnight or adding a splash of apple cider vinegar to the broth.
