S’mores Cookies

Description

Delicious and chewy s’mores cookies that bring back memories of campfires and laughter, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter (room temperature)
  • 1 cup dark brown sugar
  • 1/2 cup white sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup bittersweet chocolate chips (or chunks)
  • 4 graham crackers (broken in half)
  • 2 Hershey’s chocolate bars (or another chocolate of your choice)
  • 8 large marshmallows

Instructions

  1. Preheat the oven to 350°F.
  2. Beat together the sugar and butter in a large bowl using a hand mixer or stand mixer.
  3. Add the eggs and vanilla and mix until smooth.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Pour the dry ingredients into the wet ingredients and mix until incorporated.
  6. Fold in the chocolate chips.
  7. Refrigerate the dough for 30 minutes.
  8. Place the graham crackers on a baking sheet lined with parchment paper, spacing them evenly.
  9. Top each graham cracker with 2 pieces of chocolate, followed by a marshmallow.
  10. Scoop out enough cookie dough to cover the graham cracker and marshmallow mound, pressing the dough over the mound.
  11. Bake for 12 to 15 minutes until golden brown.

Notes

For softer cookies, slightly underbake them. You can experiment with different types of chocolate and add nuts for extra flavor.
