- 4 bell peppers (assorted colors)
- 1 cup cooked rice
- 1 cup corn (fresh or canned)
- 1 pound lean ground beef
- 1 cup black beans (canned, drained and rinsed)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet over medium heat, cook the ground beef until browned; drain excess fat.
- Stir in cooked rice, corn, black beans, chili powder, cumin, salt, and pepper until combined.
- Stuff each bell pepper with the beef mixture and place them upright in a baking dish.
- Sprinkle cheese on top of each pepper.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and the peppers are tender.
- Garnish with fresh cilantro before serving.
Notes
Consider marinating the beef for deeper flavor. You can also substitute beef with mushrooms or lentils for a vegetarian option.
