Description

A warm and comforting spicy chicken soup filled with vibrant flavors, perfect for chilly evenings.


Ingredients

  • 2 tbsp olive oil
  • 1 medium shallot, finely chopped
  • 2 medium carrots, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, finely chopped
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • ½ tsp cayenne pepper
  • 1 tsp freshly grated ginger
  • 1 jalapeño, seeded and finely chopped
  • 14 oz canned crushed tomatoes
  • 4 to 5 cups chicken broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups shredded or diced cooked chicken thighs (or chicken breasts)
  • 3 to 4 oz dry rice noodles
  • Fresh cilantro
  • Fresh thyme
  • Lime wedges

Instructions

  1. If using raw chicken, bake, grill, or boil until fully cooked. Shred or dice into bite-sized pieces and set aside.
  2. In a Dutch oven or large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add the finely chopped shallots, carrots, and minced garlic, sautéing for about 3 minutes until fragrant and softened.
  4. Stir in the diced red bell pepper, freshly grated ginger, and chopped jalapeño, cooking for another 2–3 minutes until softened.
  5. Pour in the 14 oz can of crushed tomatoes, 4 to 5 cups of chicken broth, and 13.5 oz can of full-fat coconut milk.
  6. Bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes.
  7. Stir in the 2 cups of shredded chicken and add the 3 to 4 oz of dry rice noodles.
  8. Simmer over low heat for a few minutes, stirring frequently, until the noodles are soft.
  9. Remove from heat and ladle into bowls.
  10. Garnish with fresh cilantro, fresh thyme, and a squeeze of lime.

Notes

For a vegetarian version, swap chicken for hearty vegetables or plant-based proteins. Store leftovers in an airtight container for up to four days or freeze for up to three months without noodles.
