  • 2 cloves Garlic (minced)
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • 1 tsp Smoked Paprika
  • Salt and Pepper (to taste)
  • 1 cup Shredded Cheddar Cheese (or Monterey Jack)
  • 1 cup Crushed Tortilla Chips (can swap with panko breadcrumbs)
  • 1 large Egg (beaten)
  • 1 tbsp Olive Oil (or another cooking oil)
  • 1 can Mexican-style Tomatoes with Green Chilies (15 oz can)
  • 2 Fresh Lime Wedges (or use lemon)

Instructions

  1. In a large bowl, combine ground beef, chopped onion, minced garlic, chopped cilantro, jalapeño, spices, and salt and pepper.
  2. Mix well until all ingredients are fully integrated.
  3. Add the beaten egg, shredded cheese, and crushed tortilla chips into the mixture for texture.
  4. Form small balls with the mixture, about the size of a golf ball, and place them on the prepared baking sheet.
  5. Drizzle olive oil over each ball for that lovely, crisp finish.
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  7. Serve hot with lime wedges on the side for an extra zesty kick.

Notes

Adjust the spice level by modifying the amount of jalapeño used. For a unique texture, consider using panko breadcrumbs instead of tortilla chips.
