Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with non-stick cooking spray.
- In a large mixing bowl, whisk together the eggs and milk until well combined.
- Stir in the chopped spinach, feta cheese, diced red bell pepper, garlic powder, salt, and pepper. Mix until evenly distributed.
- Divide the mixture evenly among the prepared muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes, or until the egg muffins are set and slightly golden on top.
- Allow the muffins to cool for 5 minutes before carefully removing.
