A refreshing salad featuring baby spinach, mandarin oranges, goat cheese, and a honey balsamic dressing.

- 10 oz baby spinach
- 1 can mandarin oranges (approx. 15 oz) (drained) or 4 fresh mandarins (peeled and sectioned)
- 1/4 cup red onion, thinly sliced
- 1/2 cup goat cheese, crumbled
- 1/2 cup sliced almonds (toasted)
- 1/2 cup dried cranberries
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1–2 tablespoons honey
- 2 teaspoons Dijon mustard
- Sea salt and pepper to taste
Instructions
- Preheat the oven to 350°F. Spread the sliced almonds on a baking sheet and toast them for about 4-6 minutes, or until they become fragrant and slightly golden.
- Combine all the salad ingredients: baby spinach, mandarin oranges, red onion, goat cheese, toasted almonds, and dried cranberries in a medium bowl.
- Whisk together the dressing ingredients: olive oil, balsamic vinegar, honey, Dijon mustard, sea salt, and pepper until smooth in a separate bowl.
- If the dressing seems too thick, add a small amount of water to achieve the desired consistency.
- Drizzle the dressing over the salad just before serving and toss gently to combine all the flavors.
Notes
For best flavor, use fresh ingredients. Adjust honey and balsamic vinegar to taste for a sweeter or tangier dressing.
