Ingredients

  • 1 pound ground beef
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • Broccoli florets
  • Cooked rice or noodles for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine ground beef, breadcrumbs, egg, green onions, garlic, ginger, salt, and pepper in a large bowl. Mix until well combined and form into meatballs.
  3. Place meatballs and broccoli florets on a baking sheet.
  4. Combine soy sauce, brown sugar, rice vinegar, and cornstarch in a small saucepan. Heat until thickened.
  5. Drizzle sauce over meatballs and broccoli.
  6. Bake for 20-25 minutes, until meatballs are cooked through and broccoli is tender.
  7. Serve over rice or noodles.

Notes

Refrigerate the meatball mixture for a short time before forming for better flavor. Use a cookie scoop for uniform meatball sizes.
