Ingredients

  • 2 cups shredded chicken
  • 2 celery stalks, chopped into 1/4-inch pieces
  • 1 green onion, chopped thin
  • 56 large strawberries, diced
  • ⅓ cup chopped pecans
  • ¼ cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon poppy seeds
  • ½ teaspoon pepper
  • Salt to taste

Instructions

  1. Cut and chop all ingredients accordingly.
  2. Add all the ingredients except the strawberries to a mixing bowl.
  3. Stir to combine and evenly coat.
  4. Add more mayonnaise or yogurt to adjust to the desired consistency.
  5. Fold in strawberries, or wait until just before serving to add them if making in advance.
  6. Serve the salad immediately, or chill for about 10-20 minutes before serving.

Notes

For extra flavor, consider toasting the pecans before adding them to the salad. Keep strawberries separate until just before serving to maintain freshness.
