- 2 cups shredded chicken
- 2 celery stalks, chopped into 1/4-inch pieces
- 1 green onion, chopped thin
- 5–6 large strawberries, diced
- ⅓ cup chopped pecans
- ¼ cup mayonnaise
- 2 tablespoons plain Greek yogurt
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon poppy seeds
- ½ teaspoon pepper
- Salt to taste
Instructions
- Cut and chop all ingredients accordingly.
- Add all the ingredients except the strawberries to a mixing bowl.
- Stir to combine and evenly coat.
- Add more mayonnaise or yogurt to adjust to the desired consistency.
- Fold in strawberries, or wait until just before serving to add them if making in advance.
- Serve the salad immediately, or chill for about 10-20 minutes before serving.
Notes
For extra flavor, consider toasting the pecans before adding them to the salad. Keep strawberries separate until just before serving to maintain freshness.
