Instructions
- Preheat your oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
- In a skillet, heat olive oil over medium heat, then sauté the chopped onion and minced garlic until translucent.
- Add ground turkey or beef to the skillet, browning it thoroughly.
- Stir in the cooked rice, tomato sauce, basil, oregano, salt, and pepper. Cook for a few more minutes to meld the flavors.
- Fill each zucchini boat with the meat mixture, placing them snugly in a baking dish.
- Top with shredded cheese and cover the dish with foil to retain moisture.
- Bake for 30-35 minutes until the zucchini is tender.
- Remove the foil for the last 10 minutes to allow the cheese to brown beautifully.
