Ingredients
- – 2 large sweet potatoes (500g)
- – 4-6 eggs

- – 1 teaspoon (5 ml) garlic powder
- – 1/2 teaspoon (3 ml) paprika
- – 2 tablespoons (30 ml) minced fresh parsley
- – salt and pepper, to taste
- – Vegetable oil, for cooking
- – Optional hot sauce, ketchup, and chopped avocado for serving
Instructions
- Set your oven to a temperature of 400°F. Poke holes in the skins of the sweet potatoes and microwave them for about 3-4 minutes, turning them over halfway through. They should be soft but still firm enough to slice into small cubes, akin to a just-ripe avocado. Allow them to sit for 2-3 minutes before chopping. Cut the sweet potatoes into small cubes, roughly half an inch in size, with slightly smaller being preferable.
- Warm a bit of vegetable oil in a skillet that can go in the oven, over medium heat. Introduce the diced red onion, seasoning with salt and pepper. Sauté until they become tender, which should take around 3 minutes. Add the baby spinach and diced beef (or turkey), cooking for another 1-2 minutes until the spinach wilts.
- Introduce the sweet potato cubes to the pan, adding a bit more oil if necessary. Carefully stir to combine all ingredients. Season generously with garlic powder, paprika, salt, and pepper. Allow it to cook for 3-4 minutes, stirring occasionally. If the sweet potatoes seem too firm, cover the skillet to trap the steam.
- Use the back of a spoon to create 4 small indentations in the hash. Break an egg into each indentation, then transfer the skillet to the oven without covering it. Let it bake for about 7-10 minutes until the egg whites are set. Sprinkle with fresh parsley before serving, and accompany with chopped avocado and optional hot sauce or ketchup.
