A delightful and healthy twist on traditional tacos, made with zucchini filled with a savory ground turkey mixture.
Ingredients

- 4 medium zucchinis
- 1 pound ground turkey
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil
- 1 packet taco seasoning
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the insides with a spoon to create boats.
- In a skillet, heat olive oil over medium heat. Add ground turkey and cook until browned.
- Stir in the black beans, corn, taco seasoning, salt, and pepper, and cook for another 5 minutes.
- Fill each zucchini boat with the turkey mixture and place in a baking dish.
- Sprinkle shredded cheese on top of each boat.
- Bake in the preheated oven for about 25-30 minutes or until the zucchinis are tender and the cheese is bubbly and golden.
- Garnish with chopped cilantro if desired and serve warm.
Notes
For a crowd, consider doubling the recipe for a larger batch. Experiment with different cheeses and vegetable fillings to suit your taste.
