  • 2 tbsp canola oil
  • 4 cups potatoes, cut into 1-inch cubes
  • 2 1/2 tbsp taco seasoning mix
  • 8 soft corn tortillas (6 inch)
  • 8 eggs, well beaten
  • 1/2 cup shredded Monterey Jack cheese (2 oz)

Instructions

  1. Preheat your oven to 375°F.
  2. Bake the bacon for ten minutes until crisp, then chop into small pieces.
  3. Cook cubed potatoes in canola oil over medium heat, adding taco seasoning. Stir every five minutes until soft, about 15 to 20 minutes.
  4. Arrange tortillas upright in a 13×9-inch baking dish.
  5. Scramble the beaten eggs in a skillet over medium heat, removing them while still slightly soft.
  6. Fill each tortilla with about 1/4 cup of seasoned potatoes, scrambled eggs, chopped bacon, and one tablespoon of cheese.
  7. Bake the assembled tacos at 375°F for ten minutes until heated through and the cheese is melted.
  8. Serve immediately.

Notes

For easier preparation, chop the potatoes and bacon the night before. Serve with fresh toppings like Pico de Gallo or avocado.
