- 2 cups shredded rotisserie chicken
- 8 flour tortillas
- 1 can (10 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded white cheese (like Monterey Jack or mozzarella)
- 1/2 cup diced green chiles
- 1 tsp garlic powder
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, cream of chicken soup, sour cream, diced green chiles, garlic powder, salt, and pepper in a mixing bowl.
- Spoon the chicken mixture onto each tortilla, roll them up, and place them seam side down in a greased baking dish.
- Sprinkle the shredded cheese evenly over the top of the enchiladas.
- Bake for 20-25 minutes, until the cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.
Notes
For added flavor, consider mixing in shredded vegetables or a bit of diced jalapeños. Adjust seasoning to taste before rolling the enchiladas.
