Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 flour tortillas
  • 1 can (10 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded white cheese (like Monterey Jack or mozzarella)
  • 1/2 cup diced green chiles
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, cream of chicken soup, sour cream, diced green chiles, garlic powder, salt, and pepper in a mixing bowl.
  3. Spoon the chicken mixture onto each tortilla, roll them up, and place them seam side down in a greased baking dish.
  4. Sprinkle the shredded cheese evenly over the top of the enchiladas.
  5. Bake for 20-25 minutes, until the cheese is melted and bubbly.
