- 6 large eggs
- ½ cup milk

- ¼ cup diced red onion
- 2 green onions (sliced)

Instructions
- Preheat your oven to 425°F (220°C).
- Spread the frozen tater tots in a single layer on a sheet pan and bake for 20–25 minutes until golden and crispy.
- Whisk together the 6 large eggs with ½ cup milk, and season the mixture with salt and pepper.
- Heat 1 tablespoon of butter or oil in a nonstick skillet over medium heat, then scramble the eggs until fully cooked but soft. Set aside.
- Add the diced bell peppers and red onion to the same skillet. Sauté for 3–4 minutes until tender but vibrant.
- Divide the crispy tater tots evenly between serving bowls.
- Top each bowl with scrambled eggs, cooked sausage or bacon, sautéed vegetables, shredded cheddar cheese, and sliced green onions.
- Add desired toppings such as salsa, sour cream, hot sauce, or avocado.
- Serve the breakfast bowls warm and enjoy.
