  • 6 large eggs
  • ½ cup milk
  • 1 tablespoon butter or oil
  • 1 cup shredded cheddar cheese
  • ½ cup cooked breakfast sausage (crumbled) or cooked bacon (chopped)
  • ½ cup diced bell peppers
  • ¼ cup diced red onion
  • 2 green onions (sliced)
  • Salt and pepper to taste

  • Hot sauce
  • Sour cream
  • Avocado

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Spread the frozen tater tots in a single layer on a sheet pan and bake for 20–25 minutes until golden and crispy.
  3. Whisk together the 6 large eggs with ½ cup milk, and season the mixture with salt and pepper.
  4. Heat 1 tablespoon of butter or oil in a nonstick skillet over medium heat, then scramble the eggs until fully cooked but soft. Set aside.
  5. Add the diced bell peppers and red onion to the same skillet. Sauté for 3–4 minutes until tender but vibrant.
  6. Divide the crispy tater tots evenly between serving bowls.
  7. Top each bowl with scrambled eggs, cooked sausage or bacon, sautéed vegetables, shredded cheddar cheese, and sliced green onions.
  8. Add desired toppings such as salsa, sour cream, hot sauce, or avocado.
  9. Serve the breakfast bowls warm and enjoy.
