- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1–2 tablespoons red curry paste (adjust to your heat preference)
- 1 can (400 ml) coconut milk
- 4 cups vegetable broth
- 2 cups mixed vegetables (e.g., bell peppers, carrots, peas)
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Salt and pepper to taste
- Dumplings (store-bought or homemade)
- Fresh cilantro, for garnish
Instructions
- Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
- Stir in the red curry paste and cook for another minute.
- Pour in the coconut milk and vegetable broth, bringing it to a simmer.
- Add the mixed vegetables, soy sauce, and lime juice. Simmer until the vegetables are tender.
- Meanwhile, cook the dumplings according to package instructions.
- Once the soup is ready, add the cooked dumplings to the pot.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
Adjust the creaminess by varying the amount of coconut milk. Customize the spice level by adjusting red curry paste to taste.
