Instructions
- Sauté the onion, garlic, and ginger in a large pot until fragrant.
- Add the carrots and curry powder, cooking for a few minutes.
- Stir in the red lentils, vegetable broth, and coconut milk.
- Bring to a boil, then reduce heat and simmer for about 20 minutes or until the lentils are tender.
- Season with salt and pepper.
