- 1 onion, diced
- 2 cloves garlic, minced
- 28 oz crushed tomatoes
- 4 cups vegetable broth
- 1 tsp sugar

- 1/2 cup heavy cream
- 1/2 cup cheddar cheese, shredded
- Fresh basil, for garnish
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp garlic powder
- 1 tsp dried parsley
- 1 cup buttermilk
- 1/4 cup melted butter
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute.
- Stir in the crushed tomatoes, vegetable broth, sugar, salt, and pepper, then bring to a boil.
- Lower the heat and let it simmer for 20 minutes.
- In a separate bowl, mix together the flour, baking powder, garlic powder, and dried parsley for the dumplings.
- Create a well in the center and add the buttermilk and melted butter, stirring until just combined.
- Drop spoonfuls of dumpling batter into the simmering soup, cover, and cook for 10-12 minutes without lifting the lid.
- Serve the soup hot, garnished with fresh basil and a drizzle of heavy cream.
Notes
Avoid stirring the soup while the dumplings are cooking to maintain their fluffy texture. Use high-quality canned tomatoes for the best flavor.
