Ingredients

  • Cheese curds
  • Poached eggs
  • Hollandaise sauce (made from butter, egg yolks, lemon juice, and salt)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the French fries according to package instructions until crispy.
  2. Place the hot fries on a serving plate and top with cheese curds.
  3. Poach eggs and place them on top of the fries and cheese curds.
  4. In a small saucepan, combine egg yolks and lemon juice. Whisk over low heat, gradually adding melted butter until the sauce thickens. Season with salt.
  5. Pour the creamy Hollandaise sauce over the poached eggs.
  6. Garnish with chopped green onions, and serve immediately.
