- 2 lbs of boneless, skinless chicken breasts
- 1 cup of chicken broth
- 1 (8-ounce) package of cream cheese, cubed
- 1/2 cup of heavy cream
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of sun-dried tomatoes, drained and chopped
- 1 tablespoon of minced garlic
- 1 teaspoon of Italian seasoning
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water (for slurry)
Instructions
- Place the chicken breasts in the bottom of your slow cooker.
- In a separate bowl, whisk together the chicken broth, cream cheese cubes, heavy cream, Parmesan cheese, sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper until mostly combined.
- Pour the sauce mixture evenly over the chicken in the slow cooker.
- Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and tender.
- Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
- Stir the cornstarch slurry into the sauce in the slow cooker. Stir well to combine.
- Cook on HIGH for an additional 10 to 15 minutes, stirring occasionally, until the sauce thickens to your desired consistency.
- Serve the creamy Parmesan slow cooker chicken immediately over pasta, rice, or mashed potatoes.
Notes
For added flavor, consider searing the chicken breasts before adding to the slow cooker. Feel free to experiment with spices.
