- 1 lb Ground Venison
- ¼ cup Finely Diced Onion
- 2 tbsp Minced Garlic
- 2 tbsp Taco Seasoning
- 8–10 Mozzarella Cheese Slices
- 3–4 Large Tortillas
- ¼ cup Sour Cream
- ¼ cup Mayonnaise
- ¼ cup Buttermilk
- 1 Medium Lime (juiced)
- 2 tbsp Chipotle Puree
- Kosher Salt (to taste)
Instructions
- Prepare the chipotle lime crema by mixing sour cream, mayonnaise, buttermilk, lime juice, and chipotle puree in a bowl. Season with kosher salt to taste and chill in the fridge while cooking.
- Make the taco seasoning by combining chili powder, garlic powder, cumin powder, onion powder, oregano, cayenne powder, black pepper, and salt in a small bowl. Set aside for later use.
- Cook the venison by heating oil in a skillet over medium-high heat. Add ground venison and cook until browned. Stir in the taco seasoning, diced onion, minced garlic, and a splash of water. Simmer until fully cooked, then set aside.
- Assemble the quesadilla by heating a tortilla in the skillet. Once one side is crispy, flip it and top with mozzarella cheese slices, then the cooked venison mixture. Fold the tortilla in half and cook until the cheese melts and the tortilla is crispy.
- Serve the quesadilla with the chipotle lime crema on the side. Enjoy!
