Description

Delicious zucchini filled with a savory mixture of ground meat, ricotta cheese, and marinara sauce, topped with melted mozzarella.


Ingredients

  • 4 medium zucchinis
  • 1 cup ground meat (beef, turkey, or chicken)
  • 1 cup marinara sauce
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise to create a boat shape.
  3. Scoop out the center flesh of the zucchinis, leaving enough walls to hold filling.
  4. Warm olive oil in a skillet over medium heat.
  5. Add chopped onions and minced garlic, cooking until the onions soften.
  6. Incorporate your choice of ground meat and cook until browned.
  7. Season with salt and pepper to taste.
  8. Fill each zucchini half with the meat mixture.
  9. Top filled zucchinis with shredded mozzarella cheese.
  10. Bake for 25-30 minutes until the zucchinis are tender and cheese is bubbly.
