- 4 medium zucchinis

- Salt and pepper to taste

Instructions
- Preheat your oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise to create a boat shape.
- Scoop out the center flesh of the zucchinis, leaving enough walls to hold filling.
- Warm olive oil in a skillet over medium heat.
- Add chopped onions and minced garlic, cooking until the onions soften.
- Incorporate your choice of ground meat and cook until browned.
- Season with salt and pepper to taste.
- Fill each zucchini half with the meat mixture.
- Top filled zucchinis with shredded mozzarella cheese.
- Bake for 25-30 minutes until the zucchinis are tender and cheese is bubbly.
Notes
For a vegetarian option, substitute ground meat with beans, corn, and additional vegetables. Experiment with different cheeses for a twist.
