Instructions
- Ensure all the components are ready.
- Heat the oven to 350°F (175°C). Prepare a 12-cup muffin pan by greasing it or fitting it with paper liners.
- In a large mixing bowl, blend together the flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, mix the oil, milk, egg, lemon juice, and vanilla essence.
- Combine the wet mixture with the dry ingredients until just combined; gently mix in the shredded zucchini, chocolate chips, and walnuts.
- Divide the batter among the muffin cups, filling each one about two-thirds full.
- Place in the preheated oven and bake until the tops bounce back when gently touched, approximately 20 to 25 minutes. Let them cool in the pan for a short time before moving them to a wire rack to cool completely.
