A heartwarming and creamy chowder made with fresh zucchini, corn, and bacon, perfect for cozy family dinners.
Ingredients

- 2 medium zucchinis, diced
- 1 cup fresh corn kernels (or frozen corn)
- 4 slices of bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, keeping some fat in the pot.
- Add the diced onion and cook until translucent, about 5 minutes.
- Add the garlic and cook for another minute.
- Stir in the diced zucchini and corn, cooking for 5 more minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Add the heavy cream and cooked bacon back to the pot. Season with salt and pepper.
- Simmer for another 5 minutes, then serve hot, garnished with fresh parsley.
Notes
For a thicker chowder, blend a portion and return it to the pot. Adjust seasoning throughout the cooking process.
