Description

A heartwarming and creamy chowder made with fresh zucchini, corn, and bacon, perfect for cozy family dinners.


Ingredients

  • 2 medium zucchinis, diced
  • 1 cup fresh corn kernels (or frozen corn)
  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, keeping some fat in the pot.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the garlic and cook for another minute.
  4. Stir in the diced zucchini and corn, cooking for 5 more minutes.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  6. Add the heavy cream and cooked bacon back to the pot. Season with salt and pepper.
  7. Simmer for another 5 minutes, then serve hot, garnished with fresh parsley.

Notes

For a thicker chowder, blend a portion and return it to the pot. Adjust seasoning throughout the cooking process.
