Ingredients

  • 2 medium zucchinis, grated
  • 1 cup feta cheese, crumbled
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Oil for frying
  • 1 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice

Instructions

  1. In a large bowl, combine the grated zucchini, feta cheese, flour, eggs, green onions, salt, pepper, and garlic powder. Mix well until combined.
  2. Heat oil in a skillet over medium heat. Scoop spoonfuls of the mixture and flatten them slightly in the pan.
  3. Cook for 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
  4. For the garlic yogurt sauce, mix the Greek yogurt, minced garlic, and lemon juice in a small bowl, and season to taste.
  5. Serve the fritters hot with the garlic yogurt sauce on the side.

Notes

Allow grated zucchini to drain well before mixing to ensure crispier fritters.
