- 2 medium zucchinis, grated
- 1 cup feta cheese, crumbled
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup green onions, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Oil for frying
- 1 cup plain Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon lemon juice
Instructions
- In a large bowl, combine the grated zucchini, feta cheese, flour, eggs, green onions, salt, pepper, and garlic powder. Mix well until combined.
- Heat oil in a skillet over medium heat. Scoop spoonfuls of the mixture and flatten them slightly in the pan.
- Cook for 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
- For the garlic yogurt sauce, mix the Greek yogurt, minced garlic, and lemon juice in a small bowl, and season to taste.
- Serve the fritters hot with the garlic yogurt sauce on the side.
Notes
Allow grated zucchini to drain well before mixing to ensure crispier fritters.
