Ingredients

- 2 medium zucchini, grated
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded Mozzarella cheese
- 1/4 cup all-purpose flour
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Oil for frying
Instructions
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- In a bowl, combine grated zucchini, Parmesan cheese, Mozzarella cheese, flour, egg, garlic powder, onion powder, salt, and pepper. Mix well.
- Heat oil in a pan over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil and flatten slightly.
- Fry until golden brown and crispy, about 3-4 minutes per side.
- Remove from the pan and drain on paper towels.
- Serve warm.
Notes
For extra flavor, add fresh herbs like parsley or thyme. Substitute whole wheat flour for a healthier option.
