Ingredients

  • 1 cup Italian seasoned bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Slice the zucchini into thin, even rounds.
  3. In a bowl, beat the egg.
  4. In another bowl, mix the bread crumbs, Parmesan cheese, salt, and pepper.
  5. Dip each zucchini slice in the egg, then coat with the bread crumb mixture.
  6. Spray the air fryer basket with cooking spray.
  7. Place the coated zucchini slices in a single layer in the air fryer basket.
  8. Cook for about 10-12 minutes, or until golden and crispy, flipping halfway through.
