- 2 medium zucchini
- 1 cup Italian seasoned bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- Slice the zucchini into thin, even rounds.
- In a bowl, beat the egg.
- In another bowl, mix the bread crumbs, Parmesan cheese, salt, and pepper.
- Dip each zucchini slice in the egg, then coat with the bread crumb mixture.
- Spray the air fryer basket with cooking spray.
- Place the coated zucchini slices in a single layer in the air fryer basket.
- Cook for about 10-12 minutes, or until golden and crispy, flipping halfway through.
- Serve warm and enjoy!
Notes
For best results, let the breaded zucchini slices rest for a few minutes before cooking. Avoid overcrowding the air fryer basket.
