- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 packet taco seasoning
- 2 cups tortilla chips, crushed
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- 1/2 cup sour cream
- 1/4 cup green onions, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, black beans, corn, and taco seasoning in a large bowl. Mix well.
- Layer half of the crushed tortilla chips in a baking dish.
- Spread half of the chicken mixture over the chips.
- Layer half of the salsa and half of the cheese over the chicken.
- Repeat the layers with the remaining ingredients.
- Top with sour cream and the rest of the cheese.
- Bake for 25-30 minutes or until bubbly and cheese is melted.
- Garnish with green onions before serving.
Notes
For added flavor, consider adding diced bell peppers or jalapeños. Assemble in advance and refrigerate for melded flavors before baking.
