Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, black beans, corn, and taco seasoning in a large bowl. Mix well.
  3. Layer half of the crushed tortilla chips in a baking dish.
  4. Spread half of the chicken mixture over the chips.
  5. Layer half of the salsa and half of the cheese over the chicken.
  6. Repeat the layers with the remaining ingredients.
  7. Top with sour cream and the rest of the cheese.
  8. Bake for 25-30 minutes or until bubbly and cheese is melted.
  9. Garnish with green onions before serving.

Notes

For added flavor, consider adding diced bell peppers or jalapeños. Assemble in advance and refrigerate for melded flavors before baking.
