Chicken Noodle Feel Better Soup

Description

A warm and comforting chicken noodle soup that nourishes the body and soothes the soul, perfect for chilly days.


Ingredients

  • 10 to 11 chicken thighs, with skins
  • 4 chicken bouillon cubes
  • Salt & pepper (start with 2 teaspoons of salt)
  • 1 1/2 teaspoons turmeric
  • 1/2 teaspoon dried thyme
  • 1/4 cup unsalted butter
  • 2 medium onions, diced
  • 1 1/4 cups carrots, thinly sliced (ideally baby carrots)
  • 1 1/4 cups celery, diced
  • 1 tablespoon minced garlic
  • 9 ounces fine egg noodles (about 3/4 of a 12-ounce bag)

Instructions

  1. Place the chicken thighs into a large pot. Fill with plenty of water, then add the chicken bouillon cubes and a sprinkle of salt and pepper. Use approximately 2 teaspoons of salt and a generous shake of pepper. Also, mix in the turmeric and thyme.
  2. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium, cover with a lid, and let it simmer for about 75 minutes.
  3. Once done, transfer the chicken to a bowl and let it cool for about 10 minutes in the freezer.
  4. While the chicken cools, melt the unsalted butter in a large skillet over medium heat. Add the diced onions, sliced carrots, and diced celery. Sauté until the onions turn translucent and the carrots become tender, usually around 5 to 7 minutes.
  5. Add the minced garlic into the skillet and cook for an additional 3 minutes to release its flavor.
  6. Transfer the sautéed mixture to the soup pot.
  7. Cook the fine egg noodles according to package directions in a separate pot. Drain them when finished and add them to the soup pot.
  8. Once the chicken has cooled enough to handle, remove the skins, debone, and cut the chicken into bite-sized pieces. Return the chicken to the pot.
  9. If needed, add more broth to achieve your desired consistency, tasting and adjusting with additional salt and pepper as necessary.
  10. Store any leftovers in the refrigerator for up to 5 days.

Notes

For a deeper flavor, consider sautéing vegetables before adding them to the broth. Store noodles separately to maintain texture.
