- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh herbs (parsley or cilantro) for garnish
- Bread for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, sauté until soft and fragrant.
- Stir in the sliced carrots and diced celery, cooking for 5-7 minutes until they start to soften.
- Add the diced zucchini and bell pepper, cooking for another 5 minutes until tender.
- Pour in the vegetable broth, bringing it to a boil.
- Reduce heat and stir in the heavy cream, thyme, and basil.
- Season with salt and pepper, adjusting to taste.
- Simmer for 15-20 minutes until all vegetables are tender.
- Garnish with fresh herbs and serve warm with bread.
