Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, diced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh herbs (parsley or cilantro) for garnish
  • Bread for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sauté until soft and fragrant.
  3. Stir in the sliced carrots and diced celery, cooking for 5-7 minutes until they start to soften.
  4. Add the diced zucchini and bell pepper, cooking for another 5 minutes until tender.
  5. Pour in the vegetable broth, bringing it to a boil.
  6. Reduce heat and stir in the heavy cream, thyme, and basil.
  7. Season with salt and pepper, adjusting to taste.
  8. Simmer for 15-20 minutes until all vegetables are tender.
  9. Garnish with fresh herbs and serve warm with bread.
