A warm and comforting Italian chicken soup made in a slow cooker, perfect for busy days.
Ingredients

- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place the chicken breasts in the bottom of the slow cooker.
- Add the chicken broth, diced tomatoes, carrots, celery, onion, garlic, oregano, basil, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the chicken in the slow cooker and stir back into the soup about 30 minutes before serving.
- Serve hot, garnished with fresh parsley.
Notes
Feel free to substitute vegetables based on your preference or seasonal availability. Adding red pepper flakes can bring a spicy kick.
