Description

A warm and comforting Italian chicken soup made in a slow cooker, perfect for busy days.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Add the chicken broth, diced tomatoes, carrots, celery, onion, garlic, oregano, basil, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Shred the chicken in the slow cooker and stir back into the soup about 30 minutes before serving.
  6. Serve hot, garnished with fresh parsley.

Notes

Feel free to substitute vegetables based on your preference or seasonal availability. Adding red pepper flakes can bring a spicy kick.
