Ingredients

  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. Combine flour and powdered sugar in a mixing bowl. Cut in the butter until the mixture resembles coarse crumbs. Press this mixture into the bottom of the prepared baking dish to form a crust.
  3. Bake the crust in the preheated oven for about 15 minutes or until lightly golden.
  4. Whisk together granulated sugar, eggs, lemon juice, lemon zest, and salt in another bowl until well combined.
  5. Pour the lemon mixture over the hot crust and return to the oven. Bake for an additional 20 minutes.
  6. Allow the lemon bars to cool completely before dusting with powdered sugar and slicing into squares.
