Description

Delicious iced oatmeal cookies with a chewy texture and glossy glaze that evoke warm memories.


Ingredients

  • 1/2 cup butter (softened)
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg (at room temperature)
  • 1 & 1/4 cup old-fashioned whole rolled oats
  • 1 cup all-purpose flour
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk
  • 1/4 tsp vanilla

Instructions

  1. Preheat your oven to 350F. Line a baking sheet with parchment paper and set it aside.
  2. Cream the softened butter, brown sugar, and granulated sugar together until well combined.
  3. Add the egg and vanilla extract, mixing until the batter becomes light and fluffy.
  4. Gradually mix in the all-purpose flour, rolled oats, ground cinnamon, pinch of nutmeg, baking soda, and salt. Ensure to scrape down the sides of the bowl to fully incorporate all the ingredients.
  5. Using a large cookie scooper, scoop out 8 equally sized cookie dough balls and place them on the prepared baking sheet.
  6. Gently press down on each cookie dough ball to about 1 inch in thickness.
  7. Bake in the preheated oven for 10 minutes. Avoid overbaking to retain their soft, gooey texture.
  8. Let the cookies cool on the baking sheet for 20 minutes. Once cooled, transfer them to a wire rack to cool completely.
  9. For the icing, whisk together the powdered sugar, milk, and vanilla extract. Drizzle or spread the glaze over the cooled cookies.

Store cookies in an airtight container for up to a week or freeze for longer storage.
