- 1/2 cup butter (softened)
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg (at room temperature)
- 1 & 1/4 cup old-fashioned whole rolled oats
- 1 cup all-purpose flour
- 1/4 tsp cinnamon
- Pinch of nutmeg
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup powdered sugar
- 1.5 tbsp milk
- 1/4 tsp vanilla
Instructions
- Preheat your oven to 350F. Line a baking sheet with parchment paper and set it aside.
- Cream the softened butter, brown sugar, and granulated sugar together until well combined.
- Add the egg and vanilla extract, mixing until the batter becomes light and fluffy.
- Gradually mix in the all-purpose flour, rolled oats, ground cinnamon, pinch of nutmeg, baking soda, and salt. Ensure to scrape down the sides of the bowl to fully incorporate all the ingredients.
- Using a large cookie scooper, scoop out 8 equally sized cookie dough balls and place them on the prepared baking sheet.
- Gently press down on each cookie dough ball to about 1 inch in thickness.
- Bake in the preheated oven for 10 minutes. Avoid overbaking to retain their soft, gooey texture.
- Let the cookies cool on the baking sheet for 20 minutes. Once cooled, transfer them to a wire rack to cool completely.
- For the icing, whisk together the powdered sugar, milk, and vanilla extract. Drizzle or spread the glaze over the cooled cookies.

Store cookies in an airtight container for up to a week or freeze for longer storage.
