A comforting Italian soup made with pastina and a medley of fresh vegetables, perfect for warming the soul.
Ingredients

- 1 yellow or white onion, roughly chopped
- 2 carrots, roughly chopped
- 2 celery sticks, roughly chopped
- 6 cups chicken or vegetable broth
- 1 Parmesan rind
- 1 cup pastina pasta
- 1/2 cup grated Parmesan cheese
- Salt and pepper (to taste)
- 2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions
- Combine the chopped onion, carrots, and celery with the broth and Parmesan rind in a large pot.
- Bring the mixture to a boil over high heat.
- Once boiling, reduce the heat to a simmer. Cover and let the broth cook for about 15-18 minutes until the vegetables are tender.
- Using a strainer, remove the vegetables from the pot and transfer them to a blender. Add ½-1 cup of the hot broth and blend until smooth. Be cautious as the liquids are hot.
- Pour the pureed vegetable mixture back into the pot and stir in the pastina. Simmer for another 7-9 minutes until the pasta is cooked.
- Turn off the heat. Season the soup with grated Parmesan, salt, and black pepper to taste.
- Serve hot, garnished with freshly chopped parsley if desired.
Notes
For a richer flavor, consider toasting the pastina before adding the broth.
