- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1 egg yolk
- 1/2 teaspoon vanilla extract
- 1 cup milk
- 3 tablespoons sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract (for custard)
- Fresh berries (strawberries, blueberries, raspberries)
- Fruit glaze (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix flour, butter, and powdered sugar to form a dough. Add egg yolk and vanilla extract, then mix until smooth.
- Roll out the dough and cut into rounds to fit mini tart pans.
- Press the dough into the pans and bake for 12-15 minutes until golden.
- Combine milk, sugar, cornstarch, and salt in a saucepan. Cook over medium heat while stirring until thickened.
- Remove from heat and stir in vanilla extract. Allow the custard to cool.
- Fill each tart shell with custard and top with fresh berries.
- Brush with fruit glaze for shine, if desired.
- Serve and enjoy!
Notes
For a more intense flavor, consider using fresh vanilla beans in the custard. Leftover custard can also be used as a topping for pancakes.
