- 16 oz dry orzo
- 2 cups unsalted chicken stock
- 2 cups heavy cream
- 4 cups baby spinach leaves, torn
- 0.5 oz fresh basil leaves, stems removed
- 1 jar (8 oz) sun-dried tomatoes, oil drained
- 2 cups rotisserie chicken, diced
- 5 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 2/3 cup parmesan, grated or shredded (plus extra for topping)
Instructions
- Preheat your oven to 350 degrees. Spray a 9×13 casserole dish with non-stick cooking spray.
- Combine all ingredients in the prepared casserole dish. Mix thoroughly for even distribution.
- Sprinkle additional parmesan cheese on top if desired.
- Bake uncovered for 35 minutes, checking for tenderness of the orzo.
- Allow the casserole to rest for 10 minutes after baking, then mix before serving.
Notes
For enhanced flavor, sauté garlic before adding it to the dish. Experiment with other vegetables for added nutrition.
